- 1 chicken (3 pounds) boned, skinned, diced,
- ¼ pound uncooked, long grain white rice
- ½ cup butter
- 4 tablespoons flour
- 1½ cup chopped onion
- 1 cup diced carrots
- 1 cup chopped celery
- 2 tablespoons celery seed
- 4 bay leaves
- 2 tablespoons minced fresh garlic
- Cook the chicken according to your preference.
- Add to a large pot and then stir in the rest of the ingredients.
- Simmer on low until rice is cooked and carrots are tender, about 1 hour.
