Amish Pumpkin Crunch

 

  • 2 cups pumpkin
  • 1 ½ milk
  • 3 eggs
  • 1 ½ cup sugar
  • teaspoon cinnamon
  • ½ teaspoon salt
  • yellow cake mix
  • ½ cup chopped pecans, opt
  • ¾ cup butter, melted

📋 Instructions

  1. Combine pumpkin, milk, eggs, sugar, cinnamon, and salt in a large bowl.
  2. Pour into a greased 9 by 13 inch cake pan.
  3. Sprinkle dry cake mix on pumpkin mixture.
  4. Top with pecans then drizzle butter over all.
  5. Bake at 350 until golden brown, around 50-60 minutes in the oven. You can cover with foil if it starts to get too done.
  6. Eat warm with ice cream or cool and serve chilled with whipped topping

Chris Coffee Punch

 1 gallon whole milk

1/2 gallon vanilla ice cream

1/2 gallon chocolate ice cream

1/4 cup powdered instant coffee

2 cups white sugar

1 cup water


In a small saucepan mix the coffee powder, sugar and water and heat until the sugar has melted and all the ingredients are dissolved and well mixed. Don't boil. 

Refrigerate the mixture in an airtight container until you are ready to use it, at least 30 minutes. The liquid will get kind of syrupy.

When ready to serve, pour the syrup into a large punch bowl.

Add the entire gallon of milk and stir. 

Add all the ice cream by scoops into the punch. Stir gently to mix. The ice cream doesn't have to melt all the way prior to the party. It serves as ice, keeping the punch cold.

Serve with extra hershey syrup and whipped cream as toppers

Millie's Amish Carrot Cake

 


  • 2 cups sugar
  • ½ cup oil
  • 3 eggs
  • ½ cup yogurt
  • 2 Tsp. vanilla
  • 2 Tsps. cinnamon
  • 2 Tsps. baking soda
  • ½ Tsp. salt
  • 2 cups four
  • 1 cup crushed pineapple, drained
  • 2 cups finely grated carrots
  • 1 cup nuts
  • 1 cup coconut

🧁 Icing Ingredients

  • 8 oz. cream cheese, softened
  • ½ cup butter, softened
  • 1 Tsp. vanilla
  • 2 ½ cups powdered sugar

  1. Mix all ingredients together.
  2. Pour into a greased nine-inch by 13-inch pan.
  3. Bake at 350 degrees for 50-55 minutes.
  4. Frost when cool.

Frosting

  1. Mix until smooth.
  2. Frost cool cake.
  3. Enjoy!
