Vanishing oatmeal cookies

  • 1 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tso ground cinnamon
  • 1/2 tsp salt (optional)
  • 3 cups Quaker Oats quick or old fashioned
  • 1 cup raisins chocolate chips or other mix ins could be used in the place of raisins
  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, cream together butter and sugars with an electric mixer until light and fluffy, approximately 2-3 minutes. Add in eggs and vanilla and beat well to combine.
  • Add in flour, baking soda, cinnamon and salt, and mix well by hand. Add in oats and raisins (or other mix ins) and mix well by hand.
  • Drop dough by rounded tablespoonfuls onto a cookie sheet lined with parchment paper or a silicone baking mat. Bake for 8-10 minutes or until starting to lightly turn golden brown. Remove from oven and allow to cool on baking sheet for 1-2 minutes, then using a spatula, gently transfer cookies to a wire cooling rack to cool completely.

Korean Ground Pork Bulgogi

1 bag (10.8 oz each) Birds Eye® Steamfresh Whole Green Beans 

1/4 cup soy sauce 

1/4 cup firmly packed brown sugar 

2 teaspoons toasted sesame oil 

1 pound ground pork or ground beef 

1 cup finely chopped onion 

1 tablespoon finely chopped garlic 

1 teaspoon grated fresh ginger or 1/4-teaspoon ground ginger 

1/2 teaspoon crushed red pepper flakes 

1 teaspoon toasted sesame seeds 

2 Green onions

2 T sour cream

1 t hot sauce

Hot cooked rice 

Microwave green beans according to package directions. 

Stir together soy sauce, brown sugar, and sesame oil in small bowl. 

Heat a large skillet over medium-high heat. 

Cook ground pork or beef with onion in skillet until browned, stirring to break up the large pieces, about 5 minutes. 

Drain meat and return to skillet. 

Add garlic, ginger, and red pepper flakes to skillet and cook until fragrant, about 1 minute. 

Pour in soy sauce mixture and cook until sauce is absorbed, about 5 minutes. 

Stir in cooked green beans.

Slice green onions.

Mix sour cream & hot sauce together.

 Garnish Korean ground pork bulgogi with toasted sesame seeds, green onions and serve over rice. Drizzle sour cream sauce over and enjoy.

Crispy Chicken legs Gluten free

 

  • 8 skin-on chicken drumsticks approx. 2 pounds total weight
  • 3 tbsp olive oil
  • 1 Tbsp sea salt 
  • ½ tsp black pepper
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp smoked or sweet paprika
  • 1 Tbsp dry mustard optional
  • Preheat your oven to 400 degrees F. Line a baking sheet with aluminum foil or parchment paper.
  • Add the garlic powder, onion powder, paprika, salt and black pepper to a small mixing bowl.
  • Using a fork, blend the spices together.
  • Add the olive oil to the spices and blend them together.
  • Allow the chicken legs to come to room temperature.
  • Using a pastry brush (or your hands) coat the chicken legs with the seasoning oil mixture. Make sure to coat the entire drumstick
  • Place the chicken legs in a single layer on a foil-lined baking sheet, making sure to leave room between the drumsticks.
  • Bake the chicken legs for 30 minutes at 400 degrees on the middle rack of your oven.
  • Brush the legs with the oil that has gathered on the tray and bake 
    • for an additional 5-10 minutes, until crispy (cooking time may vary).
    • *If you use an instant-read thermometer the internal temperature must be at least 165 degrees. At this temperature and time, they should be well above that internal temp

  • CAN I MAKE THESE CHICKEN DRUMSTICKS IN AN AIR-FRYER?
    Yes, you can, the only real change is cutting back on the olive oil.
    • Coat the chicken drumsticks with 1 tablespoon of olive oil.
    • Mix the seasonings together. Toss the chicken legs with the seasoning. Spray the seasoned chicken legs with olive oil spray.

    • Place the drumsticks into the air fryer basket, making sure not to crowd them.
    • Cook at 400 degrees for 10 minutes. Flip the drumsticks and cook for another 10 minutes. Remove and serve immediately.
