Ham- How to Cook/Handle/Prepare

Remove packaging material and plastic disk over bone. Use pan at least 1 inch deep. Wrap ham in foil. For best results, heat in a 300°F oven to an internal temperature of 120°F (approximately 13-15 minutes per pound). Do not overcook, as this will dry the ham.


  • 12 - 24 lb. turkey (fresh or frozen and fully thawed)
  • 1/4 cup butter, softened
  • 3 garlic cloves, minced (1 Tbsp)
  • 1 tsp dried thyme, or 1 Tbsp chopped fresh*
  • Salt and freshly ground black pepper
  • 1 Tbsp all-purpose flour
  • 4 celery ribs, chopped into 2-inch pieces
  • 1 large yellow onion, peeled and chopped into chunks
  • 2 carrots, peeled and chopped into 2-inch pieces




Turkey- 

12 - 24 lb. turkey (fresh or frozen and fully thawed)

1/4 cup butter, softened

3 garlic cloves, minced (1 Tbsp)

1 tsp dried thyme, or 1 Tbsp chopped fresh*

Salt and freshly ground black pepper

1 Tbsp all-purpose flour

4 celery ribs, chopped into 2-inch pieces

1 large yellow onion, peeled and chopped into chunks

2 carrots cut into 2-inch pieces

  • Move oven rack one level below center and preheat oven to 350 degrees.
  • In a small mixing bowl stir together butter, garlic, thyme and season with a little salt and pepper.
  • Remove neck and giblets from turkey and remove any pin feathers left behind. Tuck wings under turkey. Season cavity of turkey with salt and pepper.
  • Using the back end of a wooden spoon separate turkey breast skin from breast. Rub butter underneath skin (again I just use the back end of the spoon), smooth over skin to spread butter out. You can just rub butter over skin but I feel it seasons better when rubbed underneath.
  • Season all over turkey with a fair amount of salt and pepper.
  • Add 1 Tbsp flour to the Reynolds Kitchens Turkey Size Oven Bag and shake. Place oven bag in a roasting pan, add celery, onion and carrots to oven bag. Place turkey over vegetable layer in oven bag.
  • Close oven bag with the oven safe tie included. Cut 6 slits across top of the oven bag to allow steam to escape then tuck ends of oven bag into the pan.
  • Cook unstuffed turkey according to size (the breast should register 165 degrees in center of thickest portion in several places and the thigh 175 degrees on an instant read thermometer):
    12 - 16 lb turkey: 2 - 2 1/4 hours
    16 - 20 lb turkey: 2 1/4 - 2 1/2 hours
    20 - 24 lb turkey: 2 1/2 - 3 hours
  • Let turkey rest 20 minutes. Carefully cut top of oven bag open, transfer turkey to carving board and carve.



Mac n cheese

1 can condensed milk

1 can cheddar cheese soup

2 eggs

Mix together above ingredients add salt & pepper

1 box macaroni- cook as directed

Add to cheese & milk mixture

Add regular milk to just below macaroni line

Mix in a small bag of sharp cheddar cheese

Add additional Salt and pepper

Top w another bag of sharp cheddar cheese

Refrigerate over night 

Bake 350 1 hour


Stuffing - Stoffers


Gravy-Heinz jar


Mashed potatoes 

Wash potatoes

Place in slow cooker the morning serving on low covered with water and cook all day

When ready to serve drain water and put in kitchen aid mixer with paddle attachment

Mix well to soften

Add 1-2 sticks of butter depending on the amount of potatoes

Add milk for creamy potatoes

Add salt & pepper

Serve

You do not need to remove the skins


Corn Pudding

2 cans cream style corn 

6 T flour 

6 T butter 

3 eggs 

1 c sugar 

1 c milk 

Preheat oven to 350 

Melt butter in casserole dish 

Mix eggs, flour, sugar and milk together. 

Add corn. 

Place in melted butter dish. 

Bake for 1 hour. 

Very important to stir at 30 min so it is not soupy.

You can prepare mixture ahead and refrigerate over night but it might need to cook an extra 15 min, stir about 40 minutes when doing this way.


Green beans-Margaret Holmes Seasoned Italian Green Beans


Rolls- Sister Schubert's Dinner Yeast Rolls


Cranberry sauce

1 cup water

1 cup of sugar

Place in sauce pan and bring to a boil to dissolve sugar

Add 1 bag of washed cranberries

Reduce heat and simmer for 10 minutes or until most of the cranberries have burst.

Refrigerate overnight before serving


Pecan Pie- Karo Syrup bottle recipe


Chocolate chess pie

1 T flour

1 1/2 c sugar

pinch salt

1/2 c milk

1/2 c butter melted

6 T cocoa

2 eggs, beaten

1 t vanilla

9 inch pie shell unbaked

Mix all ingredients thoroughly.

Bake in crust at 400 for 10 min.

Reduce heat to 300 for 35-40 min.

Pie should jiggle just slightly when removed.

Mandarin Orange Salad

1 pkg Vanilla Instant Pudding Mix
1 Large can Crushed Pineapple (undrained)
2 Medium/Large cans Mandarin Oranges (drained)
1 pkg Cool Whip 8 oz ( and you could use fat free)


Mix together Cool Whip and Instant vanilla pudding (do NOT make the pudding, just use it dry).
Add undrained crushed pineapple and both cans of drained Mandarin Oranges. (Use as many mandarins as you like, more/less)
Save a few mandarin oranges to decorate the top of salad.
Refrigerate until it thickens again maybe a couple of hours before you need to use it.
Use as a side dish with a meal or serve with ice cream as a dessert!
You can make this healthier by choosing low/no sugar instant pudding mix and cool whip, and fresh mandarins.

Copycat Cranberry Bliss Bars

 

  • 2 ¼ cups all-purpose flour
  • 1 ½ teaspoons baking powder 
  • ¼ teaspoon salt 
  • ⅛ teaspoon ground cinnamon 
  • ¾ cup salted butter
  • 1 ½ cups light brown sugar 
  • 2 large eggs 
  • 1 teaspoon vanilla extract 
  • ½ cup dried cranberries 
  • 1 brick of cream cheese 
  • 2 cups white chocolate chips 
  • 1 Tablespoon grated orange zest
  • 1 cup powdered sugar
  1. First, preheat the oven to 350 degrees F and prepare a 13×9-inch baking dish.
  2. Next, in one bowl, whisk together the dry ingredients. In another bowl, mix the butter and sugar, then beat in the eggs and vanilla.
  3. Add the flour mixture to the cream mixture.
  4. Stir in the cranberries and chopped chocolate.
  5. Next, spread the batter into the pan and bake for 18-21 minutes.
  6. While the blondie layer cools, make the frosting and prep the melted white chocolate topping.
  7. Spread the frosting over the brownies and top with cranberries and melted white chocolate.
  8. Finally, cut the brownies and serve.

SERVE: You can keep these cranberry bliss bars bars at room temperature for about 2-3 hours before they need to be covered and refrigerated.

STORE: These bars will keep, chilled and in an air-tight container for up to 5 days.

FREEZE: This cranberry bliss bar recipe freezes nicely. Place the bars in a freezer safe container and freeze for up to six weeks.

Amish Pumpkin Crunch

 

  • 2 cups pumpkin
  • 1 ½ milk
  • 3 eggs
  • 1 ½ cup sugar
  • teaspoon cinnamon
  • ½ teaspoon salt
  • yellow cake mix
  • ½ cup chopped pecans, opt
  • ¾ cup butter, melted

📋 Instructions

  1. Combine pumpkin, milk, eggs, sugar, cinnamon, and salt in a large bowl.
  2. Pour into a greased 9 by 13 inch cake pan.
  3. Sprinkle dry cake mix on pumpkin mixture.
  4. Top with pecans then drizzle butter over all.
  5. Bake at 350 until golden brown, around 50-60 minutes in the oven. You can cover with foil if it starts to get too done.
  6. Eat warm with ice cream or cool and serve chilled with whipped topping

Chris Coffee Punch

 1 gallon whole milk

1/2 gallon vanilla ice cream

1/2 gallon chocolate ice cream

1/4 cup powdered instant coffee

2 cups white sugar

1 cup water


In a small saucepan mix the coffee powder, sugar and water and heat until the sugar has melted and all the ingredients are dissolved and well mixed. Don't boil. 

Refrigerate the mixture in an airtight container until you are ready to use it, at least 30 minutes. The liquid will get kind of syrupy.

When ready to serve, pour the syrup into a large punch bowl.

Add the entire gallon of milk and stir. 

Add all the ice cream by scoops into the punch. Stir gently to mix. The ice cream doesn't have to melt all the way prior to the party. It serves as ice, keeping the punch cold.

Serve with extra hershey syrup and whipped cream as toppers

Millie's Amish Carrot Cake

 


  • 2 cups sugar
  • ½ cup oil
  • 3 eggs
  • ½ cup yogurt
  • 2 Tsp. vanilla
  • 2 Tsps. cinnamon
  • 2 Tsps. baking soda
  • ½ Tsp. salt
  • 2 cups four
  • 1 cup crushed pineapple, drained
  • 2 cups finely grated carrots
  • 1 cup nuts
  • 1 cup coconut

🧁 Icing Ingredients

  • 8 oz. cream cheese, softened
  • ½ cup butter, softened
  • 1 Tsp. vanilla
  • 2 ½ cups powdered sugar

  1. Mix all ingredients together.
  2. Pour into a greased nine-inch by 13-inch pan.
  3. Bake at 350 degrees for 50-55 minutes.
  4. Frost when cool.

Frosting

  1. Mix until smooth.
  2. Frost cool cake.
  3. Enjoy!

Turkey Chili

30 oz. lean ground turkey (95-97% lean)
14.5 oz. can of diced tomatoes
30 oz. tomato sauce
4 tsp. chili powder
1/8 tsp. allspice
1/8 tsp. cumin
1/8 tsp. onion powder
1/8 tsp. garlic powder
1/8 tsp. salt
1 Tbsp. Splenda
DIRECTIONS:
1. Brown the ground turkey and drain it.
2. Add all ingredients to crockpot.
3. Cook for 8 hours on low, or 4 hours on high.
(You can also cook this on the stove in a stock pot for about an hour.)

Lean and green servings:
This recipe makes four servings, which is about 1.5 cups per serving (A soup ladle is about 0.5 cups, so you get three soup ladles full of chili -- be sure to measure). One serving counts as a full lean and green, as follows:

3 vegetable servings
3 condiments

Funny Cake Pie

 Top Part:

1 cup sugar
1 beaten egg
¼ cup butter or shortening)
1 cup flour
½ cup milk
1 tsp. baking powder
½ tsp. vanilla

Cream together sugar and shortening. Add the combined milk and egg alternately with flour and baking powder. Add flavoring and set aside until lower part is mixed.

Lower Part:
½ cup sugar
6 Tbsp. water
4 Tbsp. cocoa
¼ tsp. vanilla

Mix together the cocoa, sugar, water, and vanilla. Pour into an unbaked pie shell. Over this pour the "top part". The chocolate will come up around the outside edge which gives a nice crusty edge on the finished product. Bake in a 350 degree oven for 35 minutes or until firm (toothpick test).

Creamsicle salad

  • 8 oz. cream cheese, softened
  • 20-oz. can crushed pineapple, drained
  • 16-oz. tub whipped topping (like Cool Whip)
  • 2 cups mini marshmallows, fruit-flavored or regular
  • 6-oz. pkg. orange gelatin
  • 1 to 2 15-oz. cans mandarin oranges
  1. In a large bowl, combine cream cheese and pineapple.
  2. Fold in marshmallows, whipped topping, and orange gelatin.
  3. Lastly, stir in mandarin oranges.
  4. Spoon into a large glass bowl for best presentation and cover with plastic wrap. Refrigerate at least two hours before serving.
  5. Can sit out for at least an hour without getting watery

Sandra’s Mini cheesecake cupcakes


Crust:

1 ½ c graham cracker crumbs

¼ c butter melted

Preheat oven to 325F

Combine graham cracker crumbs and melted butter

Press firmly in cupcake liners

Bake at 325 for approximately 9-10 minutes 

Remove from oven then reduce oven temperature to 300F


Cheesecake:

16 oz cream cheese, room temperature

1 c granulated sugar

1 c sour cream 

2 eggs

2 teaspoons lemon juice

1 teaspoon vanilla

Pinch salt


In large bowl, beat cream cheese with electric mixer until smooth.

Add sugar, sour cream, eggs, lemon juice, vanilla, and salt aand beat on medium-high speed until smooth, about 2-3 minutes.


Divide evenly between muffin cups (should be almost full). Bake for 20-22 minutes at 300F or until centers are nearly set. Do not overbake. 


Remove from oven and let cool in the muffin pan for 20-30 minutes then remove from muffin pans and cool on wire rack until completely cool. Refrigerate for 3-4 hours before serving.  Top with dollop of Cool Whip and fresh strawberries, blueberries, or raspberries.  


Variations:

Top with salted caramel sauce and toffee bits

Apple pie filling with whipped cream (freshly made using heavy whipping cream)

Chopped Reese peanut butter cups and a drizzle of chocolate

Add the zest of 1 lemon to the batter before baking and increase lemon juice  to 3 teaspoons of lemon juice rather than 2 t

Add 4 oz of white chocolate (melted and cooled) to batter before baking

Add ½ c mini chocolate chips to batter before baking

Texas Roadhouse copycat rolls

 1/4 cup water

2 1/4 t yeast

1 cup of milk

6 T unsalted butter

5-6 T Sugar

1 1/2 T salt

1 egg

3-4 cups of all purpose flour

unsalted butter to brush the finished rolls

2 ounces of softened unsalted butter

2 T sugar

2 T honey

1/2 t cinnamon spice


Combine some lukewarm water and yeast in a standing mixer. Allow it to sit for about 5 minutes until it completely dissolves.

In a medium microwavable bowl combine milk, pieces of butter, sugar and salt microwave for 1 minute. Stir until mixed well.

Place everything but flour in the yeast mixture, then incorporate an egg into the mix.

Allow mixture to cool to a warm temperature if it is too hot to prevent the eggs from curdling.

Mix everything on medium speed for about 2 minutes. Continue mixing dough after adding nearly 3 1/2 cups of flour.

If necessary add more flour to make the dough soft enough. To be on the safe side use less flour rather than more.

Turn your dough out onto a lightly floured surface and knead for about 4 minutes or longer if you prefer airy bread.

Place your dough in a greased mixing bowl and turn once to coat. Cover it loosely with a clean cloth and set it aside for about 2 hours or until it gets doubled, in a warm, draft-free place. 

Punch the dough down, then roll it into a 1 inch thick rectangle. Cut the dough into squares using a knife or pizza cutter. 

Preheat your over to 350. Spray a cookie sheet pan with oil or butter then place the rolls 1-2 inches apart on the oiled pan. Cover them lightly with a kitchen towel and set aside for 30 minutes or until dough puffs up.

Bake 15 minutes until golden brown. Brush with melted butter.

7 layer Salad

 Salad

  • 1 lg head of lettuce
  • 1 bag of frozen peas
  • 1 lb. of bacon (fried crisp and crumbled)
  • 1 lb. cheddar cheese (shredded)
  • 1 med. sweet onion chopped fine
  • 8 hard boiled eggs

Dressing 
  • 3 c. mayonnaise
  • ¼ c. milk
  • ½ c. sugar
  • about a half a teaspoon of mustard
  • dash of salt
  1. Fry bacon until crisp.
  2. Layer in order given.
  3. Pour dressing mix over top.
  4. Refrigerate overnight.

Butter cream frosting

 

  • 2 sticks of butter (room temperature)
  • 3 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of milk
  • Pinch of salt
Let butter sit out to come to room temperature 
Beat butter for 5 minutes
Add sugar 1/2 cup at a time to blend well
Add milk 1 teaspoon at a time to reach the desired consistency 
Add vanilla extract
Add a pinch of salt

Taste of Home Southern pineapple casserole

 

  • 1 cup sugar
  • 1/3 cup all-purpose flour
  • 2 cups shredded cheddar cheese
  • 1 can (20 ounces) unsweetened crushed pineapple, drained

  • 1 can (20 ounces) unsweetened pineapple chunks, drained
  • topping:
  • 2-1/2 cups crushed Ritz crackers (about 60 crackers)
  • 1/4 cup butter, melted


  1. Preheat oven to 350°. In a large bowl, mix sugar and flour; stir in cheese. Stir in both cans of drained pineapple.
  2. Transfer to a greased 1-1/2-qt. baking dish. In a small bowl, mix crackers and butter. Sprinkle over top. Bake, uncovered, 30-40 minutes or until topping is brown and cheese is melted. Let stand 10 minutes.

Hummingbird Dump cake

 Produce

  • 2 Bananas
  • 2 20 ounce cans Pineapple
Baking & Spices
  • 1 tsp Cinnamon or apple pie spice, ground
Oils & Vinegars
  • 1 Cooking spray, Nonstick
Nuts & Seeds
  • 1/2 cup Pecans
Dairy
  • 3/4 cup Butter
Other
  • 1 2-layer-size package white or yellow cake mix

Preheat oven to 350°F. Coat a 13x9-inch baking pan with cooking spray. Pour the crushed pineapple onto the bottom of the pan. Top with banana slices. Sprinkle with pecans, cinnamon, and cake mix. Evenly distribute the butter over the cake mix. Bake about 45 minutes or until toothpick inserted near the center of the cake comes out clean. Cool slightly. Serve warm with ice cream, additional pecans, and/or whipped cream, if desired.
