Amish Wedding Cake

  • 3 cups sifted cake flour
  • 4 teaspoons baking powder
  • 1 1 /2 teaspoons salt
  • 5 egg whites
  • 6 tablespoons sugar
  • 2 / 3 cup vegetable shortening
  • 1 2 /3 cup sugar
  • 1 1 /3 cup milk
  • 1 1 /2 teaspoons vanilla
  • 1 /4 teaspoon almond extract
Instructions
  1. Twice sift the flour, baking powder, and salt.
  2. Beat egg whites till foamy.
  3. Add the 6 tablespoons sugar one tablespoon at a time, beating until mixture stands in soft peaks.
  4. Cream shortening and add sugar gradually.
  5. Cream till lightly and fluffy.
  6. Add flour alternately with milk, a small amount at a time.
  7. Add egg whites and flavorings.
  8. Beat thoroughly, about one minute.
