2 cups cooked elbow macaroni
1/2 lb. grated or shredded cheddar cheese
1 pint tomatoes, chopped
1 tsp. crushed oregano leaves
1/8 tsp. garlic powder (I use a bit more!)
1 tsp. instant minced onions (again...)
1/4 lb. grated mozzarella cheese
Directions:
Layer macaroni and Cheddar cheese alternately in a 2 quart baking dish until all used up.
Combine tomatoes and seasonings in a bowl; mix well.
Pour tomato mix over macaroni and cheese.
Bake COVERED at 400 degrees for 45 mins.
Add mozzarella cheese. Bake uncovered for 15 mins. longer.
Serves 4 at 430 calories each. Enjoy!
