Georgia peach ice cream

•2 1/2 pounds fresh peaches - peeled, pitted and chopped
•1/2 cup white sugar
•1 pint half-and-half cream
•1 (14 ounce) can sweetened condensed milk
•1 (12 fluid ounce) can evaporated milk
•1 teaspoon vanilla extract
•2 cups whole milk, or as needed
Directions
1.Puree peaches with the sugar and half-and-half in batches in a blender or food processor.
2.In a gallon ice cream freezer container, mix together the peach mixture, sweetened condensed milk, evaporated milk, and vanilla. Pour in enough whole milk to fill the container to the fill line, about 2 cups.
3.Follow the manufacturer's instructions to freeze the ice cream.

Strawberry pie

•3 ounces semisweet chocolate, divided
•1 tablespoon butter
•1 pastry shell (9 inches), baked
•2 packages (3 ounces each) cream cheese, softened
•1/2 cup sour cream
•3 tablespoons sugar
•1/2 teaspoon vanilla extract
•3 to 4 cups fresh strawberries, hulled
•1/3 cup strawberry jam, melted
Directions
•In a large saucepan, melt 2 oz. chocolate and butter over low heat, stirring constantly; spread or brush over the bottom and up the sides of pastry shell. Chill.
•Meanwhile, in a large bowl, beat the cream cheese, sour cream, sugar and vanilla until smooth. Spread over chocolate layer; cover and chill for 2 hours.
•Arrange strawberries over the filling; brush with jam. Melt the remaining chocolate and drizzle over the top. Yield: 6-8 servings.

Anne's easy taco casserole

1 lb ground turkey (beef or chicken)
2 cups shredded cheddar
2 cups mild salsa
2 cups corn kernels
1 bag corn tortilla chips (8 ounces)

Directions


1.Brown ground meat and drain. Mix with corn and salsa.
2.Layer half of the chips on the bottom of a lightly greased 9x13 pan.
3.Top with half of the meat mixture and half of the cheese.
4.Repeat the layers and cover with foil.
5.Freeze at this point, if desired.
6.Bake at 350 degrees F for 30 min. (if not frozen) until the casserole is bubbly and cheese is melted.
7.If previously frozen, bake at 350 degrees F for about 50 minutes or until bubbly and cheese is melted.

Chocolate Cookie Cake

Ingredients
•1 package (18-1/4 ounces) white cake mix
•16 cream-filled chocolate sandwich cookies, coarsely crushed
•1 package (3 ounces) cream cheese, softened
•2 tablespoons 2% milk
•2 cups heavy whipping cream
•3/4 cup confectioners' sugar
•Additional cream-filled chocolate sandwich cookies
Directions
•Prepare cake batter according to package directions; stir in crushed cookies. Spoon into a greased and floured 10-in. fluted tube pan.
•Bake at 350° for 33-38 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
•In a small bowl, beat cream cheese and milk until smooth. Beat in cream until mixture begins to thicken. Gradually add confectioners' sugar; beat until stiff peaks form. Frost cake. Garnish with additional cookies. Refrigerate leftovers. Yield: 12 servings.

Turkey Cranberry burgers

These burgers are full of flavor and low in fat. Just be sure to choose ground turkey breast instead of regular ground turkey, which may be a mixture of light and dark meat.

•1/2 cupfinely shredded carrot
•1/4 cupthinly sliced green onions
•2 tablespoonsfine dry bread crumbs
•2 tablespoonsfat-free milk
•1/4 teaspoondried Italian seasoning, crushed
•1/8 teaspoonsalt
•1/8 teaspoonground black pepper
•12 ouncesuncooked ground turkey breast or chicken breast
•1 cupmixed baby greens
•4 whole wheat hamburger buns, split and toasted
•1/2 cupwhole cranberry sauce
Directions
In a medium bowl, stir together carrot, green onions, bread crumbs, milk, Italian seasoning, salt, and pepper. Add ground turkey; mix well. Shape the turkey mixture into four 1/2-inch-thick patties.

Place patties on a greased grill rack directly over medium coals. Grill, uncovered, for 12 to 15 minutes or until patties are done (165°F),* turning once halfway through grilling.

Arrange mixed greens on bottoms of buns. Top with grilled patties and cranberry sauce; replace top halves of buns.

Broiling Directions: Place patties on greased unheated broiler pan rack. Broil 4 to 5 inches from the heat for 11 to 13 minutes or until done (165°F),* turning once halfway through broiling

*Test Kitchen Tip: The internal color of a burger is not a reliable doneness indicator. A turkey or chicken patty cooked to 165°F is safe, regardless of color. To measure the doneness of a patty, insert an instant-read thermometer through the side of the patty to a depth of 2 to 3 inches.

Chocolate chip pancakes

2 c all purpose flour
2 t sugar
2 t baking powder
1 t baking soda
1/4 t salt
2 eggs
2 c buttermilk
1/4 c vegetable oil
1 c miniature chocolate chips

In a bowl, combine the first 5 ingredients. Combine the eggs, buttermilk and oil, stir into dry ingredients just until moistened. Pour the batter by 1/4 cupfuls onto a greased hot griddle
Sprinkle each pancake with 2 t chocolate chips
Turn when bubbles form on top
Cook until second side is golden brown

Buttermilk blueberry pancakes

2 c all purpose flour
1 T sugar
1/2 t baking soda
1/4 t salt
1/8 t baking powder
2 c buttermilk
2 eggs
1 T canola oil
1 cup blueberries fresh or frozen

Combine flour, sugar, baking soda, salt, and baking powder in one bowl
Combine the buttermilk, eggs, and oil stir into dry ingredients just until moistened

Pour batter by 1/4 cupfuls onto a greased hot griddle
Sprinkle 1 T blueberries on each pancake
Turn when bubbles form on top
Cook until the second side is golden brown
Serve with butter and syrup

Oreo pound cake

25 oreo cookies
3 c all purpose flour
1 c milk
1 1/2 c sugar
1 c butter flavored shortening
2 1/2 t baking powder
1 t salt
1 t vanilla
4 large eggs

Glaze
6 oz chocolate chips
3 T butter flavored shortening
1 T milk
1 T corn syrup

Preheat oven to 350
Grease and flour 9' tube pan
cut each oreo in quarters
Beat flour, and reminaing ingredients minus cookies and glaze until blended. Beat 2 minutes on high

Spoon about 3/4 cup batter into pan
Gentely stir cut up cooking into remaining batter and spoon into same pan
Bake 50 minutes or till cake springs bakc when lightly touched.
Toothpick test will not work
Cool cake 10 minutes
Remove from pan
cool completely

Glad
In 1 qt saucepan over low heat
Heat chocolate bits, shortening, milk and corn syrup stirring constantly until melted and smooth
This freezes well too and can be made in mini loaf pans as well

Texas Buttermilk pound cake

1 c shortening
3 c sugar
6 egg yolks
3 c all purpose flour
1/4 t baking soda
1/2 t salt
1 c buttermilk
6 egg whites beaten stiff
2 t lemon juice

Beat shortening and sugar together
Add egg yolks one at a time beating after each
alternate dry ingredients with buttermilk and mix
fold in lemon juice and beaten egg whites carefully
Put in a greased tube pan
Bake 325 for 1 hour 20 minutes

Glaze
1/4 c buttermilk
powdered sugar

Mix to desired consistency and pour over warm cake

Submarine roll 8 inch

4 oz ham
6 blanched fresh asparagus spears cut in half lenghwise
2 slices swiss cheese

Greek Macaroni Pastitsio

1 pd lean ground lamb
1 pd lean ground beef
2 onions finely minced
4 cloves garlic through press
4 T melted butter
3 T extra virgin olive oil
1 1/2 t salt
3/4 t black pepper
1 can tomato paste
1 1/2 c water
1 T crushed Greek oregano
1 1/2 pd Greek long macaroni or ziti
3 c grated Kefalotiri cheese
8 oz feta cheese crumbled
12 eggs beaten until fluffy
1 qt milk
chopped parsley

Saute meats and onion in 1 T butter and 1 T olive oil. Add salt, pepper, garlic, oregano, tomato sauce and paste, water. Simmer 45 minutes until thickened.

Cook macaroni in salted water until al dente; drain rinse with cold water, drain, add rest of melted butter and olive oil. Mix

When sauce is done, place half macaroni in non-stick sprayed 14 x 11 inch baking dish
Sprinkle 1/3 cheese cover with meat mixture, spread evenly.
Sprinkle 1/3 more cheese and add rest of macaroni.
Beat eggs well and add milk.
Carefully pour over macaroni, stick knife down serveral places to allow egg mixture to blend (do NOT stir).
Top with remaining chesses, dust with chopped parsley
Bake 350 for 3-40 min until top is a golden brown and firm when tested with knife
Let stand 20 minutes

Rhubard dump cake

1 lb. fresh rhubarb, chopped (about 4 cups)
1/2 cup sugar
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1 pkg. (2-layer size) white cake mix
1 cup water
1/3 cup butter, melted
3/4 cup thawed COOL WHIP Whipped Topping

Make It
HEAT oven to 350ºF.

PLACE rhubarb in 13x9-inch baking dish; sprinkle with sugar and dry gelatin mix.

BEAT cake mix, water and butter with whisk until well blended. Pour over rhubarb; spread to completely cover rhubarb.

BAKE 45 min. or golden brown. Serve warm topped with COOL WHIP.

Lettuce
Diced tomatoes

Spinach artichoke dip

1 pkg (10 oz) frozen chopped spinach
2 (13 oz) can of artichoke hearts, drained
1/2 c mayo
1/2 c sour cream
1 1/4 c parmesan cheese grated
1 1/4 c pepper jack cheese shredded

Preheat oven to 350
Cook spinach in microwave for 5 minutes and squeeze dry
Place artichoke hearts in food processor and chop
Combine spinach, artichoke hearts, mayo, sour cream, parmesan and 1/4 cup of pepper jack cheese (not all)
Stir well

Grease baking dish
Place mixed ingredients in baking dish
Cover and top with remaining pepper jack cheese
Bake 30 min
Best served with bagel chips

1 lb ground beef
1 lb sausage
1 lb cheese cubes
1/2 t oregano
2 loaves party size rye bread

Brown beef and sausage in skillet, drain grease
Add cheese to meat
Stir till cheese melts
stir in oregano
Let cool
Spread over rye bread slices on a baking sheet
Bake 8-10 min for 400

Black bean & corn salsa

1/2 cup balsamic vinaigrette dressing
1/4 t black pepper
1 T fresh cilantro, chopped
1/8 t ground red pepper
1/4 t ground cumin
2 (15 oz can black beans, drained
1 (11 oz) can corn
1/2 cup chopped onion
1/2 cup green onions chopped
1/2 red pepper chopped

In a small box mix dressing, pepper, cilantro, red pepper and cumin.
Set aside
In a large bowl, mix the remaining ingredients.
Toss with dressing to coat
Cover
Refrigerate for at least 1 hour before serving
Serve with tortilla chips

New Orleans Crock pot red beans & rice

1 pound dried red beans
7 cups water
1 green bell pepper, chopped
1 medium onion, chopped
3 celery stalks, chopped
3 garlic cloves, chopped
1/2 pound andouille sausage, sliced
3 tablespoons Creole seasoning
Hot cooked rice
Garnish: sliced green onions
Preparation
Place first 8 ingredients in a 4-quart slow cooker.

Cook, covered, at HIGH 7 hours or until beans are tender. Serve with hot cooked rice. Garnish, if desired.

Thaw a bag of frozen meatballs.
Roll out crescent rolls dough and cut diagonally
Wrap dough around each meatball

LIme Coconut Torte

Crust:
1 14 oz pkg of sweet flaked coconut
2 eggs
2 tbsp sugar

Toast all but 1 cup of the coconut, can be done in a fry pan or oven but stir often.
Take the toasted coconut, add the reserved cup, 2 eggs and sugar,mix well and press it evenly in a torte pan which you have sprayed with Pam.
I put a round piece of parchment paper in the bottom also.
Bake at 375 degree for 10 to 12 minutes or until it gets brown around the edges.
Put on cooling rack when finished to cool.

Filling:
4 oz of softened cream cheese
1/3 cup of powdered sugar
1 8 oz contained of thawed frozen whipped topping, minus 1 cup Thin lime slices Lime curd

Mix cream cheese, powdered sugar, 3 tbsp of the curd and the whipped topping, (can add a little lime zest if you wish).
Spread over the coconut crust. (You can remove it to a plate or leave it in the pan).
Take part of the curd and drizzle it over the top, and run a knife through it, back and forth making a pretty design, then add the reserved whipped topping to a decorator bag and put some stars around the edges and add a lime slice ever so often.
Very pretty and sooooo good!

Crockpot Lasagna

Nonstick cooking spray
1 26-oz. jar pasta sauce
3/4 cup water
1 15-oz. carton light ricotta cheese
1/2 cup shredded carrot
6 lasagna noodles
1-1/2 cups shredded mozzarella cheese (6 oz.)
Directions

1. Coat a 4-quart slow cooker with cooking spray. In a large microwave-safe bowl stir together pasta sauce and water. Cover bowl with waxed paper and microwave on high for 3 minutes. Meanwhile, in a medium bowl stir together ricotta cheese and carrot; set aside.

2. Spoon 1/2 cup of the sauce mixture in the bottom of prepared slow cooker. Break half of the noodles to fit the bottom of the slow cooker and arrange over the sauce in the slow cooker. Spoon mounds of half of the ricotta mixture over the noodles. Top with 1/2 cup of the mozzarella. Spoon half of the remaining sauce over the layers. Top with remaining noodles, breaking to fit, remaining ricotta mixture, and 1/2 cup mozzarella. Spoon remaining sauce over and top with remaining mozzarella.

3. Cover; cook on low heat setting for 3 hours (noodles should be tender). Remove crockpot from liner and let stand covered for 20 minutes. Makes 6 servings.

Stovetop Method:Prepare as above, except increase noodles to 8 and layer ingredients in a large deep skillet. Bring to boiling over medium heat. Reduce heat and simmer, covered, for 35 minutes. Remove from heat and let stand for 20 minutes.

Cook: 3 hours
Stand: 20 minutes

Paula Deen's Sour Cream Pound Cake

1/2 teaspoon vanilla extract
3 large eggs
1/4 teaspoon baking soda
1/2 cup sour cream
1 1/2 cup sugar
1 cup butter, room temperature
1 1/2 cup all-purpose flour

Directions

Preheat oven to 350 degrees F.

In a large mixing bowl, cream the butter and sugar together. Add the sour cream and mix until incorporated. Sift the baking soda and flour together. Add to the creamed mixture alternating with eggs, beating in each egg 1 at a time. Add vanilla.

Pour the mixture into a greased and floured loaf pan. Bake for 40 minutes to 1 hour or until toothpick inserted into the center of the cake comes out clean.

Easy Beef Strogonoff Banquet style

Banquet family size salsbury steak meal cooked as directed
1 box of maccaroni noodles or 1 bag egg noodles cooked as directed
1 can beefy mushroom soup
4 T butter


Cook Salsbury steak meal as directed and cut into bite size pieces
Cook noodles as directed
Drain
In a large serving dish add noodles, soup, butter, mix
Add gravy and steak pieces

Creole jambalaya

2 tablespoons butter or margarine
1 large onion, chopped
1 green bell pepper, chopped
8 green onions, chopped
2 celery ribs, chopped
3 cups cubed cooked ham (1 pound)
1 pound Cajun-flavored or smoked sausage, sliced
1 (8-ounce) can tomato sauce
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground red pepper
5 cups cooked rice
Garnishes: fresh parsley sprig, chopped fresh parsley
Preparation
Melt butter in a large skillet over medium heat. Add onion and next 3 ingredients; sauté until tender. Add ham, sausage, and next 4 ingredients. Cook, stirring occasionally, 20 minutes.

Stir in rice, cover, and cook, stirring occasionally, 30 minutes over low heat. Garnish, if desired.

John's Creole Red beans

1 (16-ounce) package dried red kidney beans
1 pound spicy smoked sausage
1 tablespoon vegetable oil
3 celery ribs, chopped
1 medium-size green bell pepper, chopped
1 large onion, chopped
3 garlic cloves, minced
1 (14 1/2-ounce) can crushed tomatoes
1 (32-ounce) container chicken broth
3 1/2 cups water
2 bay leaves
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
Hot cooked rice
Garnish: chopped green onions
Preparation
Rinse and sort beans according to package directions. Place beans in a Dutch oven; cover with water 2 inches above beans, and let soak 8 hours. Drain beans, and rinse thoroughly; drain and set aside.

Cut smoked sausage into 1/4-inch-thick slices.

Sauté sausage in hot oil in Dutch oven over medium heat 5 to 7 minutes or until sausage is golden brown. Remove sausage with a slotted spoon, and drain on paper towels, reserving drippings in Dutch oven. (Store sausage in refrigerator until you're ready to stir into bean mixture.) Add celery and next 3 ingredients to hot drippings, and sauté 5 minutes or until vegetables are tender. Add tomatoes, and simmer, stirring occasionally, 7 minutes.

Stir in beans, broth, and next 5 ingredients; increase heat to medium-high, and bring to a boil. Boil 10 minutes; reduce heat, and simmer, uncovered, stirring occasionally, 1 1/2 to 2 hours or until beans are tender. Stir in sausage, and simmer 30 more minutes. Serve over hot cooked rice. Garnish, if desired.

Note: For quick soaking, place kidney beans in a Dutch oven; cover with water 2 inches above beans, and bring to a boil. Boil 1 minute; cover, remove from heat, and let stand 1 hour. Drain as directed, and proceed with recipe. For testing purposes only, we used Conecuh Original Smoked Sausage, which is spicy.
